This one is a day late…sorry!!
For the last few weeks I’ve been cutting back on my meal portions. And it’s starting to pay off! One lunch that I really like it this one.
All you need is: A whole wheat English muffin, one avocado, a few slices of tomato, and some hummus.
It’s amazing whenever you start eating less…you get full off of something as small as that! Pretty awesome if you ask me. :)
In this week’s Pin of the Week I found this pretty awesome idea for breakfast. Overnight Oats! This is a super easy breakfast that will fill you up. You just make it the night before so you can just grab it on your way out the door for work. Click on the picture for the recipe from Yummy Mummy Kitchen. This will be my second day of doing it and I have to say that I really like it!

And here is my version!
I used a pint sized jar, 1/2 cup of oats, 1/2 cup of milk, a teaspoon of chia seeds, a few spoon fills of Greek yogurt, and then some strawberries, blueberries, and bananas! Soo yummy! :)
You would think that having over 7,400 pins I could come up with something easy for these P.O.T.W.’s But…I’m finding it hard to pick something. It’s probably because I’m so used to seeing everything on Pinterest that I think that everyone has seen it. Then I pop over to Facebook and see that a friend shared something that I saw a few months ago. I think that I’m on Pinterest too much. lol
If you happened to have forgotten, I really like tea. Earl Grey has become my favorite at the moment. I found some cool other things that the Earl Grey flavor is being used in other than tea.
I think that I’ll have to try some of these recipes really soon!
Warmer weather is finally upon us here in the Ozarks! I love eating soup as much as the next girl, but I am ready to start eating fresh things. I don’t remember if I started doing salads in Mason jars last year or the year before that, but I think that it’s a great way to transport a delicious, healthy lunch to work.
Back to her Roots has a great step-by-step tutorials (With Pictures) of how to do several different types of mason jar salads. This is what mine typically look like.
I couldn’t figure out what what I wanted to show you guy this week, and then I found it. Obliviously I can’t do this to my own kitchen because I live in an apartment. This would be perfect for anybody that likes to do a lot a baking. I know that it takes a lot of time to clear a spot for I can roll out dough and then clean it up so I can use it to prepare other food.
Sorry for the lack of post on Monday! We didn’t really care to brave the weather, and Josh and I hadn’t gotten to see each other for a whole week since he was in Chicago.
For this week’s pin I found a super easy, delicious breakfast that Josh and I really enjoyed. Just take a roll of crescent rolls, some bacon ( I did pre-cooked bacon because I didn’t want there to be bacon smoke in the apartment), eggs, tomatoes, and cheese. Pop it in the oven and Bam! I think that most of you will have figured out that I like food. Today at lunch I got to stop by my favorite food truck. The Baller Food Truck. Everything that they make is cooked into a ball. Josh and I shared their Hog Ball (pulled pork bbq), the Turkey Ball (turkey & stuffing), and then a Hashbrown Casserole Ball (<–).
Right now I’m watching the finale of The Taste on Hulu+. I know that from watching any cooking show that I don’t really want to compete in something that big. And the things that they actually have to cook, one, I’ve never heard of, and two, I don’t think that I would like to actually eat the stuff that they make. I really want to be able to cook and eat really well, but most of the time I just cook up some small shell pasta and add some cheese and milk. Homemade mac n’ cheese. I do sometimes get a little more fancy than that, but not that much.
I am happy to report that I’ve been able to not drink any soda this week, and I haven’t eaten after 8:30 pm this week. I’m starting to feel better health wise too! :)
